MEDITERRANEAN CHICK PEA & SPINACH SOUP


1 tbsp olive oil
1 small onion, chopped
2 cups chicken stock
1 can chick peas, drained and slightly mashed
2 cups chopped spinach, packed tightly into the measuring cup,
or half a package of frozen chopped spinach
Salt and pepper to taste

A. Saute the onion in olive oil over medium high heat until wilted
B. Add the chicken stock and bring to a boil
C. Add the chick peas and the spinach
D. Simmer for 10 minutes
E. Enjoy!

** the quantities of spinach and chick peas may be easily altered to suit your tastes - freezes well too **
